The Beginnings

I'm hoping to start this blog for all of my up and coming trips, experiences, and "aha" moments over the next several years. With currently volunteering with the Latino Ministry, going to Peru in three weeks and other trips in the future, along with my new experiences, learning opportunities (such as trying to learn Spanish), and "aha" moments from God, I wanted a place to keep track of it all and share it with others.

So let me begin this journey with a story from today...

I was out with a friend and we had lunch at Rey Azteca, a Mexican restaurant, in Chanhassen. I ordered two chicken and cheese quesadillas, not really sure what to expect. When our waitress brought out our food, I was surprised to see how huge the quesadillas were! Thank goodness I was hungry. After eating the first one, I wasn't sure if I could eat the second one. But I had nearly all of the second one before I refused to eat any more of it. It was DELICIOUS! The chicken was so tender. It reminded me of pulled pork or pulled turkey, only chicken. I think there was a combination of cheeses melted with the chicken. And there was a small taste of some sort of spice and it looked like there was some green and red somethings in it, though I had no idea what those were. It was delicious and I really am wanting to go back to that restaurant.

My friend and I split the bill, and I was in charge of the tip. Our food was pretty inexpensive, and I find joy from leaving generous tips. I ended up giving our waitress a 35% tip. My thought process is this: what's a few more dollars out of my pocket? Plus, it will make her day! We wrote "Muchas gracias!" and "Dios te bendiga!" on the bill with the cash left for her. All I can hope is that the extra few dollars was a small blessing for her today.

Later on today, we played Upwards, similar to Scrabble. While I was trying to find words I could play on the board with my available tiles, most words I was coming up with were Spanish words. I was very proud of myself for starting to think a little bit in Spanish (barely, yet it's progress!).
